style, which owes much to the geographical
position of the Punjab itself. A territory
set in a plain in the foothills of the Himalayas
with rivers running into lush green fields.
Punjabi Cuisine requires the skillful blending
and cooking of paneer and vegetables with
herbs, spices and other ingredients to produce
a rich taste and smooth texture.
This special blend of rich, flavour some
curries, tandooris, breads and basmati rice
make Punjabi cuisine one of the most popular
regional cuisine throughout India and the
world.
Spices such as coriander, cumin, cloves,
cinnamon, cardamom, black pepper, red chilli
powder, turmeric and mustard are regularly
used in Punjabi cuisine. However these spices
do not dominate the dish but instead gently
promote the primary ingredient, paneer or
vegetables.
